Baked Codling Fillet, French Beans, Sweet Mustard, Tomato Salsa

- 4 codling fillets (skinned)
- 400g French beans (topped & tailed)
- 4 teaspoons mayonnaise
- 1 teaspoon wholegrain mustard
- 1 clove garlic, (peeled & finely chopped)
- 1 teaspoon honey
- Salt and pepper
- 2 tablespoons of chopped herbs
- 2 tablespoons breadcrumbs
- 100g soft cheese
- 2 chopped tomatoes
- 1 chopped red chilli
- 1 tablespoon chopped herbs

- Combine the cheese, crumbs & herbs together. Roll out and cut into squares. Place over cod fillets which have already been seasoned.
- On a greased over tray bake the cod in the oven for 5-7 minutes until crust has browned.
- Cook beans until tender and strain off water. Add mayonnaise, mustard, honey and garlic. Season.

Mix the tomato with chilli, herbs, and seasoning. Spoon the salsa over the cod.
