Baked Codling Fillet, French Beans, Sweet Mustard, Tomato Salsa

Ingredients
  • 4 codling fillets (skinned)
  • 400g French beans (topped & tailed)
  • 4 teaspoons mayonnaise
  • 1 teaspoon wholegrain mustard
  • 1 clove garlic, (peeled & finely chopped)
  • 1 teaspoon honey
  • Salt and pepper
  • 2 tablespoons of chopped herbs
  • 2 tablespoons breadcrumbs
  • 100g soft cheese
  • 2 chopped tomatoes
  • 1 chopped red chilli
  • 1 tablespoon chopped herbs
Method - Herb Crust
  • Combine the cheese, crumbs & herbs together. Roll out and cut into squares. Place over cod fillets which have already been seasoned.
  • On a greased over tray bake the cod in the oven for 5-7 minutes until crust has browned.
  • Cook beans until tender and strain off water. Add mayonnaise, mustard, honey and garlic. Season.
Method - Salsa
Mix the tomato with chilli, herbs, and seasoning. Spoon the salsa over the cod.
